José Avillez, um dos chefs mais conceituados de Portugal, abriu o restaurante Belcanto totalmente renovado em 2012, ganhando a sua primeira estrela Michelin nesse mesmo ano. Em 2014, recebeu a sua segunda estrela Michelin e, em 2019, foi considerado um dos 50 melhores restaurantes do mundo pelo The World's 50 Best Restaurants. Atualmente, está classificado em trigésimo primeiro lugar. Tem vários restaurantes em Portugal (Lisboa e Porto) e no Dubai. O seu estilo de cozinha contemporâneo e inspirador valeu-lhe inúmeros elogios e prémios nacionais e internacionais, incluindo o de Chef do Ano pela revista Wine.
