David Khayat nasceu em 1956 em Sfax, na Tunísia. Em 1961 a família emigrou para Nice, onde estudou antes de ir para Paris. Foi chefe do serviço de oncologia no Hospital Pitié-Salpêtrière de 1997 a 2017, além de professor de Oncologia na Universidade Pierre e Marie Curie; dirigiu também o Plano Nacional contra o Cancro em França, trabalhou em universidades dos EUA e de Israel e foi assessor da Presidência da República francesa para os planos de combate oncológico.
