Assunção Santos licenciou-se em Ciências do Meio Aquático no Instituto de Ciências Biomédicas Abel Salazar ICBAS da Universidade do Porto.
Trabalha desde o início do projeto na Estação Litoral da Aguda ELA, na Praia da Aguda, em Vila Nova de Gaia, como monitora freelance nos programas de educação ambiental e na investigação científica.
É coautora de vários livros publicados pelas Edições Afrontamento sobre o mar, as pescas e recursos de água doce.
É casada com Mike Weber com quem tem dois filhos e pratica Beachcombing com grande dedicação, colecionando vidro-do-mar em todas as praias que visita.
