Ana Henriques, formada em padaria avançada, fundou, em 2015, a empresa Glu Glu Free, a primeira padaria/pastelaria certificada pela Associação Portuguesa de Celíacos (APC) na zona do Ribatejo e Oeste. Apaixonada pelo modelo alimentar PALEO XXI, principalmente pelo mundo da padaria natural, desenvolveu vários workshops e formações dentro da área.
