American Food Habits In Historical Perspective

Using dietary information and other pertinent facts, this work assesses the nutritional status of Americans during different historical periods. Four categories of food are identified and analysed: mainstream cuisine, regional cooking, "regional phenomena" (including ethnic foods) and "pop" foods.
