Filipa Ruas
Filipa Ruas, born on May 28, 1981, saw art and music as the best way to live her life from a young age, until she was captivated by the pleasures of food. A graduate in Kitchen Management and Production from the Setúbal School of Hospitality and Tourism, she completed an internship at the Hotel Fortaleza do Guincho that left a lasting impression. Vincent Farges was the chef who inspired her and will continue to inspire her whenever rigor, flavor, and love for food are discussed. She worked in several restaurants, but it was after becoming a mother to twins Afonso and Lourenço that she discovered a new world called vegan food, raw foodism, and health. In 2018, she accepted João Manzarra's challenge and became the chef of the presenter's restaurant. The Old Butcher, a 100% vegan space. The adventure is over, but the love for vegan recipes and fresh, delicious ingredients continues.
